Mix together:
- 1 cup black beans, drained and rinsed
- 1 cup corn (thaw first if frozen)
- 1 chopped bell pepper
- ¼ cup chopped red onion
- Juice of 1 lime
- 1 tablespoon olive oil
Toss and serve chilled.
